cheeseburger-in-a-meatloaf recipe!
Ingredients:
1 cup whole oats
2 fresh organic eggs
1 cup chili sauce
1/4 cup pickapeppa sauce
3 tablespoons finely grated Vidalia onion
2 tablespoons mustard (Try spicy brown or dijon!)
3 tablespoons extra virgin olive oil
2 or 3 leaves of fresh organic basil, finely chopped
1 teaspoon brown sugar or molasses
Sea salt and fresh ground pepper to taste
1 1/2 pounds ground free range turkey breast
2 cups finely shredded organic cheese (I like provolone or swiss.)
OPTIONAL: Brown and crisp half a pound of turkey bacon (no preservatives kind), crumble and add to mixture.
Place the oats, eggs, chili & pickappeppa sauce, basil, mustard, onion and olive oil into a large bowl. Let sit for 10 minutes for oats to soften. Add all the other ingredients to the oats/sauces mixture, and mix just until blended. Don't overwork the mixture or the meatloaf may get tough.
Pat mixture lightly into the loaf pan. Bake for 45 minutes or until meat is cooked through and juices run clear. Remove the pan from the oven and reduce the temperature to 300. Pat the top of the loaf gently with paper towels to absorb excess grease, and spread extra chili sauce/ketchup over the top, if you'd like. Return to the oven for about 10 minutes. After removing from the oven the second time, let the loaf cool in the pan about 10 minutes before removing to slice. Serve with "cheeseburger fixings."
Makes 6 servings -- and terrific sandwiches from the leftovers.
