"CHEESEBURGER" TURKEY LOAF

"CHEESEBURGER" TURKEY LOAF RECIPE

Ingredients

  • 1 1/2 pounds ground free range turkey breast
  • 1/3 cup coarsely grated (or very finely minced) fresh vidalia onion
  • 1/2 cup whole oats
  • 1/2 cup bottled chili sauce (or 1/4 cup each ketchup and spicy seafood sauce)
  • 2 whole eggs
  • 3/4 cup grated sharp cheddar cheese (white or yellow)
  • 2 tablespoons Worcestershire sauce (or substitute Pickapeppa sauce if you like really spicy entrees -- I do!)
  • 2 teaspoons dijon mustard (the bright yellow stuff will work, too)
  • 3/4 teaspoon fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

      Preheat oven to 375 degrees. Lightly coat a 4 x 8-inch loaf pan with vegetable oil or line with foil.

      Place the oats, eggs, chili sauce, mustard and olive oil into a large bowl.  Let sit for 10 minutes for oats to soften.  Add all the other ingredients to the oats/sauces mixture, and mix just until blended.  Don't overwork the mixture or the meatloaf may get tough.

      Pat mixture lightly into the loaf pan. Bake for 45 minutes or until meat is cooked through and juices run clear.  Remove the pan from the oven and reduce the temperature to 300.  Pat the top of the loaf gently with paper towels to absorb excess grease, and spread extra chili sauce/ketchup over the top, if you'd like.  Return to the oven for about 10 minutes.  After removing from the oven the second time, let the loaf cool in the pan about 10 minutes before removing to slice. Serve with "cheeseburger fixings."  

      Makes 6 servings -- and terrific sandwiches from the leftovers.
