CRISPY OATMEAL RAISIN COOKIES
~ neither low sugar nor low fat ~
(At least 1 hour before preparing cookie dough, toss 1 ¼ cups raisins in 2 tsp. boiling water mixed with ¾ tsp. vanilla and ¼ tsp. other flavoring---I recommend either orange or rum. Cover the container and allow the raisins to absorb most of the moisture. Preheat oven to 350 degrees.)
Beat these together with a mixer on medium speed until creamy:
½ cup butter (do not substitute margarine)
½ cup vegetable oil
1 ½ cups brown sugar (firmly packed)
¾ cup white sugar
Add these and beat well again:
2 eggs
½ tsp. Vanilla
Add these and mix well on low mixer speed or by hand:
1 ½ cups all-purpose flour
1 ¼ tsp. ground cinnamon
½ tsp. ground allspice
½ tsp. salt
1 ¼ tsp. baking soda
Stir in by hand:
3 ¼ cups uncooked, old-fashioned Quaker Oats
& the plumped raisins, plus any liquid
Drop dough by generous tablespoonfuls onto an ungreased cookie sheet (I use the air-bake sheets because they don’t burn easily.) Bake for 13-15 minutes until golden brown. Cool slightly on the cookie sheet (no more than a minute) and remove to wire racks to finish cooling. The cookies will be very crispy -- and very tasty.
