QUINOA PARMIGIANA
(Yes, use another pasta if you like, but you'll be missing out nutritionally!)

Ingredients:
1 cup quinoa
1 vegetable buillion cube
1/4 cup of your favorite caesar salad dressing (Newman's Own brand is a great one if you can't do homemade)
2 medium plum tomatoes, finely chopped
5 tablespoons grated parmesan cheese
l large clove garlic, minced
fresh herbs to taste (like Italian parsley)

freshly ground black pepper to taste

      Place the quinoa in a fine mesh strainer and rinse well.  Combine the rinsed quinoa with 2 cups fresh water and the buillion cube in a small saucepan.  Bring the mixture to a boil over high heat.  Stir the quinoa briefly, lower the heat, cover the pan and simmer for about 15 minutes until the grain is tender and the liquid is absorbed.  Rinse the quinoa under cold water and drain.
      Combine the cooked quinoa, the salad dressing and other ingredients together in a bowl.  You can serve as it is, topping with more freshly ground black pepper and a sprinkle of a fresh herb -- I prefer fresh chopped Italian parsley -- or you can refrigerate the mixture for a couple of hours to serve cold.
