Strawberry Kiwi Fruit Leather
- 2 cups fresh strawberries (stems removed and sliced)
- 1 and 1/2 cups fresh kiwi (peeled and sliced)
- 1 Tbsp. lemon juice
- 2 Tbsp. light corn syrup
Spread the slices of fruit on paper towels and pat dry. Place the strawberries and kiwis in a blender. Process until the mixture is smooth.
Pour 2 1/4 cups of the strawberry-kiwi puree into a bowl. Stir in the lemon juice and light corn syrup.
Line a 15x10 inch jellyroll pan with heavy-duty plastic wrap. Use a piece of masking tape or scotch tape underneath the plastic wrap at the corners to secure the wrap to the pan.
Pour the strawberry-kiwi mixture into the prepared pan and spread thinly and evenly over the plastic wrap, leaving a 1-inch margin on all sides. Dry in an oven at 150 degrees for 7-8 hours or until surface is no longer sticky. Remove the fruit leather from pan while it is still warm and roll the rectangle up jellyroll fashion. Cut the log of fruit leather into five 2-inch sections and wrap each of these smaller logs in plastic wrap.
Note: If you use a dehydrator, use the tray provided instead of the pan recommended above and be sure to follow the manufacturer's instructions.
