THE TASTE OF CHOCOLATE
This comes from a test done by a graduate student at Cornell University in 1998, but you can conduct your own and see if your results are a match for his.

Most people describe the taste of chocolate by itself, without involving the sense of smell, as being "somewhat chalky."

Do you agree or disagree?  You can conduct a similar test on your friends and family using milk chocolate, dark chocolate, white chocolate (not really chocolate at all!) or other strongly flavored foods to determine how big an impact the sense of smell has on the way they think something tastes.

Most scientists in the field of olfactory studies believe that as much as 80% of our capacity to taste is actually a function of our capacity to smell and remember smells.

If you happen to really, really like the smell of chocolate, one of the candles I sell from the Pure Integrity pure soy candle scent collection is PURE CHOCOLATE.  The lighted candle smells heavenly, like deep, rich brownies are baking in the oven -- as my Juliana says, "it's to die for!"

BE SURE to visit the SWEET SCIENCE OF CHOCOLATE web site for more history and experiments featuring this luscious wonder-food.
